IMG_4243e "historic" Carillon Brewery

This was a great destination trip with my sister and her daughter- in-law. A newly built tavern/ brewery that is modeled after one from the 1800s. They brew beer on premises with ingredients that would have been available in southwest Ohio in the 1800s. You can watch as they brew beer in copper kettles over charcoal fires, and then age it in wooden barrels. The spent grain is then utilized in their bread recipes. Rough hewn timber decor and period costumes for the workers add to the ambiance.

 

Good food, good beer, and good times! Just off I-75 in Dayton OH-- I recommend it to anyone from the area or just passing through. My Coriander ale was delightful!
