Chocolate peanut butter granola bars
Kid-style...I've made these granola bars a few times and had the brilliant idea to use my 4 oz Mason jars so they're in kid-friendly helping sizes. Once they're cooled I put one of the screw on plastic storage lids on top and put them in the pantry. This has been a great way to give the kids a snack that's (for the most part) healthy, at their level and the right size for their little tummies. I'm planning on using some of the jars for things like muffins (instead of using muffin papers) and other baked goods. I also use them to store kid-friendly sized snacks in the fridge like coin shaped carrots, homemade yogurt, etc.
Recipe -
Ingredients
4 cups whole oats
3/4 cup peanut butter - melted
1 cup chocolate chips (I use Enjoy Life brand)
1/2 cup honey
1/2 cup coconut oil - melted if it's in its solid state
Mix all ingredients together in a large bowl. It is easiest to do this with your hands. Take a handful of mixture, probably about a half cup worth, roll it into a ball, stuff down inside jars and flatten the tops with your fingertips, pressing the mixture into the sides (you may want to oil the jars but it seems to work fine without oiling). Bake at 325-350 for 20 minutes or until just set. Cool on a cloth and then place lids on top.
