Evaporation

During the Highland Maple Festival in Highland County, Virginia, a number of sugar camps demonstrated the process of making maple syrup. At Rexrode's Sugar Orchard near Hightown, the demo featured a wood-fired open pan evaporator. A significant amount of sugar water is boiled away to create the finished product; as noted on the county's website, about 40 quarts of sugar water are needed to make one quart of syrup.
