Prawn and noodle salad

 

Some salad leaves

100gms prawns per person

Chinese noodles

Bunch of coriander

 

ginger3-4 cms

garlic 3-4 cloves

tournesol oil –about 150-200ml

sesame oil

soy sauce

lime juice

dried or fresh chillie

 

Process the last 7 ingredients in jam jar or similar

Prepare noodles (briefly boil and refresh in cold water). Pour 1/3 of “vinaigrette” over noodles to impregnate flavours and allow to stand for a while. Just before eating- lay leaves on flat platter and toss with 1/3 of “vinaigrette”. On top lay on the noodles and tease through some of the leaves . Lay on prawns and tease through the rest of the salad Finally drizzle the rest of the vinaigrette over the prawns and sprinkle with chopped coriander
