Stuffed Pork

Pork loin cut and unrolled into a sheet, then stuffed with mushrooms, carrots, asparagus, red peppers, and zucchini… then rolled back again and tied.

 

Rubbed with brown sugar, black lava salt, cracked peppercorns, cumin, garlic powder and smoked paprika.

 

Smoked – low & slow – with hickory.
