Mint Brownie Cookies

This is really a chocolate sugar cookie with mint chips added! Nice easy recipe and super yummy good!

 

Mint Brownie Cookes

 

1/2 cup Butter

3/4 cup sugar

1 egg

1/2 tsp vanilla

1 TBLSP (or so) cream

1-1/4 cups flour

1/4 tsp salt

1/4 tsp baking powder

1/3 cup cocoa

 

Cream butter until light and fluffy. Beat in sugar. Add egg and vanilla, then beat thoroughly. Add cream. Sift together dry indredients and mix with butter portion, adding more cream if too dry looking. Add mint chips. Arrange by teaspoonfuls on a buttered or parchment paper lined cookie sheet about 1 inch apart. Bake about 8-9 minutes in a 325 oven.
