Rum soaked currants in a rich artisan cake with a strong Espresso.

 

A beautifully, moist rich cake with currants tasting of rum.

 

Not so heavy as a traditional UK Christmas fruit cake but very tasty indeed.

 

There was a choice of brandy cream, clotted cream or whipped cream with it.

 

Best to start the diet after Christmas.
