Cooking Wagyu - August 7, 2021

Ordered from Grand Western Steaks. This is Australian raised Wagyu, so some snobs might not consider it to be "real" Wagyu. In any event...

 

The next day we tried some of the Filet Mignon. After the dry-brine, they were cooked simply with a cast iron skillet hard sear and basted with butter. Here's a cross-section of the medium rare cook that I was going for.
