Lychee Mousse, Pâte d'Amande infused with Ginger, Chrysanthemum surprise

ivory white lychee mousse tucked in a ginger-infused pâte d'amande base.

 

lychee mousse is so light, almost ethereal. mousse is lovely, but the clincher for me is definitely the pâte d'amande base. it's somewhat like a cross between a financier & almond tart base of Mont Blanc, softer-than tart, moist with a very subtle ginger after note. The ginger is very very mild, it does not linger but leaves a very soothing feel in the mouth.

 

yellow "yolk" on the lychee mousse is actually frozen chrysanthemum tea. So refreshing so simply amazing!
