the infamous turtles
I could be on my deathbed (in fact I was) and friends and family would still be asking me "are you going to make turtles soon?". The turtle molds are painted with dark chocolate, shelled in 43% milk chocolate, sprinkled with fleur de sel, packed with home made soft caramel, sprinkled with a few more grains of fleur de sel, topped with a pecan half and backed with hand piped dark chocolate. Talk about labor intensive. But, really, probably the best thing I have ever made.
Well, as it turns out, there is something better than one of my turtles. A giant turtle. I got an antique mold of a large turtle. I used basically the same formulation as the small turtles, except that I incorporated the fleur de sel into the caramel. End result? 1/4 lb of indescribable heaven. I can only make two at a time of the monsters, thank goodness.
