Roast Chicken with Beet Salad

I marinated some boneless breasts in olive oil and garlic, threw them onto a roasting pan with some more garlic and grape tomatoes.

 

The beets are a mix of golden and red, roasted, peeled, tossed with red onion, feta, olive oil, and cider vinegar.

 

Baked potato is self-explanatory.

 

This dinner was so simple, but had a lot of flavor and the chicken was soo tender. Beets are one of my favorite foods.
