Fried Chicken Thighs simmered in a red sauce

 

Chicken thighs - dredged in seasoned flour and fried to golden brown

 

Red Sauce - one large can crushed tomatoes, one onion chopped, 6 cloves garlic chopped, a few shakes of dried oregano, about a dozen leaves of fresh basil, some lemon juice and salt and pepper

 

When golden and pretty much done, place chicken in the sauce and simmer for a minimum of 1 1/2 hours, low heat with cover on, stir occasionally.

Melt in your mouth chicken

 

Note: Edamame pasta on side above (high fiber, low carb alternative to pasta)
