Whey too Italian buns

In the Netherlands we have something called Italian buns with oregano and semolina in the dough topped with more semolina.

 

I had attempted to make 'mozzarella' but ended up with cream cheese and a bunch of whey.

 

Baker's formula

70% flour

20% semolina

10% whole wheat

70% whey

1,2% salt

0,3% yeast

2tbs oregano

 

Semolina for topping
