Biscotti - cooling

Mix everything together, make a log and bake it for about 25 minutes. Cool for 5 minutes and cut on the bias into 10 mm pieces. Return to the oven and back for another 20 minutes, turning after 10 minutes. Remove and cool on a rack.

There are many opnions about how long to leave them to cool before putting into an airtight container. I'm going with 12 hours, so that they stay crisp and dunkable.
