Beginning

Today it's green soup.

 

Start with

Chopped onions, lightly softened in a little oil

Garlic (I forgot to buy any today =/ )

Some herbs (I used my 'Italian' mix, with oregano)

A head of celery, chopped

Kumara (sweet potato)

Carrots

Cabbage

Peas

Lentils (red as is, or prepared green ones)

 

Add each ingredient and sweat in turn with the lid on

 

Add some vegetable (or chicken) stock and bring to boil then simmer for at least 30 minutes (45 is better)

 

Blitz with the stick blender to your prefered consistency

 

Add a good amount of Greek yogurt

Lemon juice

Some vinegar (I like balsamic)

A good dollop or three of whole grain mustard

Stir well

 

Rest on low heat for a few minutes and serve
