Sweet potato soup
I made this yesterday for 40 and had some left over. Soup is always better on the second day! It is easy to make, and fairly cheap, too. This all took about 40 minutes to produce, including veg prep. I am blessed to have a food processor to do all the heavy chopping.
Ingredients
Sweet potato
Carrots
A can or two of good tomatoes
Onion
Ginger
Olive (or canola) oil
Chili flakes
Garlic
Stock )veg or chicken)
Garnish with anything - I used rocket because I had some in the kitchen; pepper and a dollop of yoghurt
How
In a big pan
Heat up a little oil
Add chopped onions and garlic and sweat for a while
Add ginger and chili
Stir and heat till fragrant
Add the rest of everything and cover with the best stock you have
Raise to a boil and then allow to simmer for 20 minutes or so
Use an immersion blender to render everything into a creamy pan of love
Add salt if you think it needs it.
Garnish and Serve.
