Fish Supper

A small portion of haddock and chips. Today I was offered tar tare sauce and a wedge of lemon. The youth behind the counter suggested I would enjoy some gravy, too. He was right!

 

A YouGov survey found that 23% of Northerners regularly pour gravy over their chips, compared to 15% of Midlanders and 9% of Southerners. Greater Manchester is considered the spiritual home of gravy on chips, with 38% of residents indulging.

 

Afternote: I think, for clarity, that I should say the gravy is for dipping your chips in; not the fish! Also, you dip your chips; you don't pour the gravy over them - that's why you get the gravy on a pot.

 

I am learning a lot about fish and chips in England. In the North, the default fish is haddock while in the South it's cod. Personally, I prefer skate, but good luck finding any - it tends to go straight to France and Portugal.

 

Finally, "fish supper" is a Scottish or Irish term. But if you are in a fish and chip shop and ask for one, you tend to get it!
