Cranberry bread
Inspired by "Karelian bread". Karelia is a region in Northeast of Europe near to Finland. I cry when I see this bread made with raisins, this is just wrong. Cranberry is the way.
Scald is similar to Borodinskiy:
80g of whole rye flour
20g is fermented rye malt powder
Coriander and caraway
Boiling water
Preferment:
Regular 100% poolish with 80g of white flour and 80g of water
Scald dried cranberries with building water
Dough:
Preferment + scald
220g of white bread flour
100-120g of water (I took water I used to scald cranberries before, make sure it was cooled down)
Salt, sugar
Cranberries were added before putting to a tin. I used lamination method
Brushed with coffee syrup: melt some sugar and add hot strong espresso to it, boil for several minutes
