Mint chocolate brownies
My contribution to our office picnic tomorrow.
1 pound unsalted butter
1 pound semisweet chocolate chips
1 package mint chocolate chips (mine was 10 oz)
6 ounces unsweetened chocolate
6 extra-large eggs
2 tablespoons vanilla extract
2 1/4 cups sugar
1 1/4 cups flour, divided
1 tablespoon baking powder
1 teaspoon salt
3 cups chopped walnuts
Preheat oven to 350 degrees. Grease and flour a 13x18 sheet pan. The pan I used in this photo is 12x17, which works but a bigger one would be better.
Melt together the butter, chocolate chips, and unsweetened chocolate. Cool slightly. Stir together the eggs, vanilla and sugar. Stir into the warm chocolate mixture and cool to room temperature.
Stir together 1 cup flour, baking powder and salt. Add to cooled chocolate mixture. Toss the walnuts and chocolate chips with reserved 1/4 cup flour to coat. Then mix into the chocolate batter. Pour into prepared pan.
Bake for 30 minutes or until toothpick tester comes out clean. Don't over bake!
