Mixed Vegetables with Oatmeal

INGREDIENTS
1 leek
1 medium carrot, peeled and diced
1 medium parsnip, peeled and diced
1 cup of chopped broccoli florets
3 tablespoons of porridge oats (oatmeal)
1-2 teaspoons of fresh chopped chives or parsley (optional)
METHOD
1. For the leek, cut off the root end and the thick top end and pull off any thick outer leaves.
2. Cut the leek in half lengthwise and wash well in a bowl of water, then drain and chop white and green parts finely.
3. Put everything into a medium-sized saucepan and add enough water to just cover.
4. Bring to a boil over high heat then reduce the heat to low and allow the mixture to simmer gently until the vegetables are soft – 10-15 minutes.
5. Remove from the heat, cool a little, and then use a stick blender to make a smooth puree.
