1 cup soy body fortress

1/3 cup olive oil

1 tb. baking powder

2 cups shredded carrots

1 tsp. cinnamon

1/2 tsp. ginger

1/2 tsp salt

2 tsp. sweet 'n lo bulk (equals 1 cup sugar)

1/2 tsp. vanilla extract

1 cup water

 

Frosting 2/3 tup imitation cream cheese

2 cups frozen whipped topping

2/3 packet of crystal light raspberry lemonade

 

Bake in loaf

Divide in middle

slice each half into thirds

Frost each third with 1/6th of frosting recipe

 

Makes two small square layered cakes.
