Parma Hams
Parma is about 55 miles northwest of Bologna in Emilia Romagna. It is famous for its hams (from which we get prosciutto) and its cheese (the true "parmesan"). Except for tourists, people here do not eat spaghetti Bolognese, just as people in Italy generally don’t eat spaghetti and meat balls. They eat meatballs, and they eat spaghetti, but not together. Two American brands of pasta sauce are based on Italian words. Prego means “you’re welcome” and is what you reply when someone says "gracie" (thank you). And the Italian word for a meat-based pasta sauce is ragù.
