Big Firm Tomatoes
At a market in Hefei, the capital of the Chinese province of Anhui
Such big firm tomatoes are ideal for a dish called Xihongshi Chao Jidan (西红柿炒鸡蛋, English: "scrambled eggs with tomatoes"). Softer tomatoes would turn to mush in the wok.
The ingredients of this extremely popular dish are one big firm tomato, four beaten eggs and one spring onion. Cut the tomato into small cubes and the spring onion into small pieces and in the meantime heat oil in a wok over high heat. Add the onions, then the tomatoes and finally the beaten eggs and stir everything while seasoning with salt and sugar. The whole thing has to go very quickly, but then the dish is already finished. It is served with or without rice.
The secret of this wonderfully simple but tasty dish is the sugar resp. its dosage. Ideally, people who are not familiar with the preparation wonder why this simple dish tastes so wonderfully delicious without realising that it is because of the sugar.
