Tapping sap trees is a springtime tradition across Wisconsin, including right here in Dane County. Syrup production is a labor intensive and careful process, and for Dan Cornelius, who founded Yowela Farm in rural Stoughton, it is an activity that heralds warmer days to come. This year Dan, a member of the Oneida Nation of Wisconsin, produced syrup from silver maples (darker with a rich, smoky flavor) and box elders (light amber color) and we certainly treasure the result.
