Food Network Recipes-Green Chile Grilled Chicken Burgers INGREDIENTS * 2 boneless, skinless chicken breasts * 3 hatch (or Anaheim) chiles * 1/4 cup red onion, finely chopped * 1 tsp. raw honey * 2 tsp. lime juice * 2 tbsp. cilantro, chopped * 1 tsp. chili powder * 1 tsp. ground cumin * 1/4 tsp. kosher salt, plus more to season chicken * 1/8 tsp. ground black pepper, plus more to season chicken * 2 slices pepper Jack cheese * 2 buns, toasted or grilled LET'S GET COOKING... * Heat broiler and place chiles under the broiler, turning frequently, until skin is mostly charred. Remove from broiler and allow to cool enough to touch. Scrape the blackened skin off the chile and discard. Dice the chile. * In a large bowl stir together the green chiles, red onion, raw honey, lime juice, cilantro, chili powder, cumin, salt, and pepper. Set aside. * Preheat grill to medium-high heat. Season chicken with salt and pepper. * Place the chicken on the grill and grill until cooked through, approximately 4-6 minutes per side. * Remove from the heat and slice. * Serve the burgers on the buns, over the pepper jack cheese, and topped with the chile mixture.
