SESAME & BROWN BUTTER NOODLES with MUSHROOMS II

While this was good enough to make again without changing the recipe, I did make some changes. The main change being increasing the amount of onions, and including green pepper as well. I also left out the green onions on top but that was more of a 'not having any on hand' issue than wanting to change that aspect of the recipe.

 

60 g. Unsalted Butter

5 ml. Sesame Oil

50 g. Green Pepper (sliced)

50 g. White Onion (sliced)

240 g. White Mushrooms (washed and sliced)

Salt

 

* Brown the butter on medium heat

* Add sesame oil, onions, peppers, and mushrooms

* Salt as desired, allow mushrooms to become fully tender, reduce to low

 

120 g. dry Pasta (preferably spaghetti or similar noodle)

20 g. fresh grated Parmesan

 

Okay, so tossing freshly cooked pasta in Parmesan is something that has been making the rounds on the internet for a few months, even going as far to be recommended by two fairly well known celebrity chefs. It's not a 'technique' (I use the term loosely here) that is all that new, as it's common with carbonara, so I decided to give it a try. I attempted it on three different occasions, including for this recipe, and... I think it's a trick, an act of vengeance upon dishwashers. Unless one likes wasting their freshly grated Parmesan, spending twice the time cleaning the dishes, having to go over them and the utensils with a magnifying glass and wired scrub brush, and having their scrubbing sponges stink for days from Parmesan being stuck in them, I would not recommend tossing freshly cooked pasta in fresh Parmesan. This is unfortunate because in theory it sounds like a good idea to get things to stick to the pasta better, especially for something like mushrooms, which is why I tried it three times on pasta with mushrooms. FUCK YOU, CELEBRITY CHEFS INTENTIONALLY MISGUIDING PEOPLE... or whoever made the fake article, to whomever it applies. I did it the first time and suspected it might be a trick. I did it the second time to be sure. I did it this time so I can bitch about it. Maybe it came to be becauuse of some high and mighty ninny complaining about the freshly grated Parmesan melting and clumping atop various pasta dishes. Who knows for sure why it came to be, what I do know is that I would never willfully recommend it other than to trick someone or enact revenge upon a dishwasher. This is indicative of why 'professionals' pf any profession cannot be trusted.

 

* Cook pasta per instructions

* Drain and immediately toss with Parmesan

* Toss pasta and buttered mushrooms together

 

fresh grated Parmesan

Sesame Seed Bagel Seasoning

 

* Top with Parmesan and bagel seasoning.

 

Of course, the biggest change here from the first time I did it is that this photo is actually good, and the other one was bad. The Parmesan trick aside, this is a good recipe.
