APPETIZERS

 

Antipasto Bresaola with Rocket Salad (same day)

(Bresaola, baby arugula, 1/2 tsp lemon juice, 1/2 tsp olive oil, black pepper, Parmesan cheese)

 

Roasted Butternut Squash Soup (2 days before)

(1 butternut squash, 2 tbsp fresh sage leaves, 1 tbsp balsamic vinegar, 1 tbsp dark molasses, 1/2 cup onions, 1/4 cup celery, 1/4 cup carrot, 4 cups chicken broth, 1/2 cup half-and-half, 1/2 tsp oregano, pinch of cinnamon, clove, nutmeg, cayenne, cumin, coriander, salt, pepper, parsley)

SIDE DISHES

 

Stir-Fried Spinach and Mushrooms with Garlic and Lemon Zest (same day)

(1 lb spinach, 10 mushrooms, 1 tbs olive oil, 1/2 tbs butter, 1/2 tsp grated lemon zest, 1/2 tsp minced garlic, white wine, salt, pepper)

 

Roasted Peppers Salad (1 day before)

(1 orange bell pepper, 1 red bell pepper, 1 yellow bell pepper, 1 large sweet onion, 1 tbs olive oil, salt, pepper, balsamic vinegar, pinch of basil and thyme)

 

Roasted Sweet Potatoes with Cumin (same day)

(3 sweet potatoes, 1 tbs olive oil, 1 tsp cumin, pinch of cayenne, salt, pepper, 1 tbs of chopped cilantro)

 

Mashed Potatoes (same day, morning)

(3 Yukon potatoes, butter, milk, salt, pepper)

 

Basmati Rice with Dried Fruits and Nuts (3 days before, freeze)

(1+1/2 cups basmati rice, 3 cups chicken broth, 1 onion, 1 tsp ginger, 1 tsp garlic, 1/2 jalapeño, 2 tbsp scallions, 1/2 tsp salt, pinch of black pepper, 1/2 tsp garam masala, 1/2 tsp cumin, 1/4 tsp saffron, 1 cup dried fruits, 1/2 cup toasted almonds, 1 tbsp olive oil)

 

Balsamic Glazed Brussels Sprouts with Pancetta (1 day before)

(2 oz pancetta, 2 tbsp olive oil, 10 oz brussels sprouts, 2 tbsp balsamic vinegar, 2 tsp maple syrup, 2 tbsp unsalted butter, lemon zest, salt, black pepper)

 

Sweet Corn Cheddar Spoonbread (same day, morning)

(3 large ears of corn, 2 cups milk, 1 1/2 cups cornmeal, 3/4 tsp salt, 1 bunch chives, 12 oz sharp cheddar, 1/2 jalapeño, 6 eggs, 2 tbsp butter)

MAIN DISH

 

Moroccan Spiced Butterfly Chicken x 2 (same day, marinate overnight)

(2 x 3.1/2 lb chicken butterflied, 3 garlic cloves, 1 cup cilantro leaves, 3 tbs lemon juice, 3/4 tsp coriander, 3/4 tsp cumin, 3/4 tsp paprika, 1 tsp salt, 1 tsp hot red pepper flakes, 3/4 olive oil)

SAUCES FOR MAIN DISH

 

Cilantro Cream Sauce (for chicken) (4 days before)

(250cc cilantro leaves, 1 tbsp unsalted butter, 1 shallot, 2 mushrooms, 1/3 jalapeño, 1 tsp cumin powder, 125cc chicken broth, 60cc heavy cream, 1 egg yolk, 1 tbsp brown sugar, 1 tsp balsamic vinegar + 2 tsp rice vinegar)

 

Pickled Tomato Salsa (for chicken) (4 days before)

(3 tomatoes, 4 scallions, 1/3 jalapeño, 60cc white vinegar, 1+1/4 tbsp brown sugar, 1 tsp salt, 2 tsp grated ginger, 1/2 tbsp grated garlic, 1 tsp mustard seeds, 1 tsp black pepper, 2/3 tsp cumin powder, 1/8 tsp cayenne pepper, 1/4 tsp turmeric powder, 60cc olive oil)

 

Cranberry Sauce (for chicken) (3 days before)

(fresh cranberries, orange juice, lemon zest, water, honey, cinnamon stick)

 

Gravies (5 days before)

(1 lb. chicken wings for making broth, onion, carrot, thyme, turkey stock, pan juice, KA gluten-free flour mix, butter, salt, black pepper)

Dark Chocolate Mousse w/ Whipped Cream (1 day before)

(85g bittersweet chocolate, 1 egg, 2 egg yolks, 45g granulated sugar, 1 tbsp water, 125cc heavy cream, 1/2 tsp rum, whipped cream for topping)

 

Gluten-Free Pumpkin Pie (1 day before)

(184g KA Gluten-Free flour mix, 1 tbsp cane sugar, 1/2 tsp xanthan gum, 1/3 tsp salt, 1tbsp buttermilk powder, 42g unsalted butter, 43g Spectrum natural organic all vegetable shortening (gluten-free), 1 large egg, 2 tsp vinegar, 2 cups pumpkin (15-oz can of organic pumpkin puree), 1/2 cup granulated sugar, 1/3 cup light brown sugar, 1 tbsp KA Gluten-Free flour mix, 1/2 tsp salt, 1 tsp ground ginger, 1 tsp ground cinnamon, 1/2 tsp ground nutmeg, 1/8 tsp ground cloves, pinch of black pepper, 3 large eggs, 1/2 cup heavy cream, 3/4 cup whole milk )
