Retro frozen fruit salad
It looks like it is soft and fluffy in the photo...it isn't. It's frozen solid. Had to let it sit on the counter for over 5 minutes just to be able to cut some squares and even then...they shattered a bit .... but, who cares? It's pretty tasty.
I found the recipe in an old cookbook whilst looking for some other salad.
Couldn't resist when it said 'whipping cream and cream cheese'....
The almond flavour from the maraschino cherries shows up every so often... which I love... and, I put some finely chopped bits of candied ginger in it as well.. mmmm.... oh, and.... I don't usually see kumquats at my grocery store. As if .!! hahahah.... so I chopped up some dried apricots instead. All good. Along with dates and pineapple and I also crumbled some flaked, toasted almonds in there as well...
they serve it on a bed of salad greens...hahahhah....we ate it for a dessert treat.
There is some "mayo" in it... but, I only had Miracle Whip, which is not the same flavour. I was hesitant to put in 3 TBSP...so only gave it one TBSP ...and, next time...if I make it again..I won't put in any at all...it is a great dessert. And, who wants mayo in dessert?
There are lots of different recipes online ... so many variations of 'frozen fruit salad'. Take your pick and give one a try. It's fun.
