Amazingly easy Blueberry Jam
If you are like me and don't want to bother making many jars to 'leave for later'... why not give this lovely jam a try?
There is no processing... no massive amounts of berries to pick/buy, wash and prepare.
You can have jam in about an hour...
I began with blueberry because I have several bags of frozen berries. Next I want to try strawberries.... or some mixed berries....
It is just 2 or 3 ingredients.

Lemon Juice (optional)

As it mentions in the recipe...no water necessary if you use frozen berries ... but, I did add a bit of lemon juice to cut the sweetness and also..I only used 1/4 cup of sugar. They do say less sugar can affect the consistency of the jam...but, I spooned off a couple tablespoons of the liquid as it cooked and it was great. Surprisingly...the berries stay whole during cooking even if they were frozen ... I thought they would become soft and disappear... but no...so do a bit of mashing if you want less whole berries in your lovely, very delicious jam.
