My 3 ingredients little Christmas cakes, just came out of oven and added brandy and apricot glaze. Will decorate when cold.

3 Ingredient Fruitcake

 

2 Cups of self-raising flour

1kg of mixed fruit

600ml of Chocolate milk or Iced Coffee Milk

 

Soak the fruit in the milk for 24hrs

 

Mix in the flour until combined

 

I used muffin tray, so I used patty cases and scooped 1 ice cream scoop full into each case, then wet back of spoon and press down into the case, then put a little more on top to make a mound.

 

Preheat fan forced oven to 150degres

 

I cooked for 40mins, but check after 30mins test with skewer that it is not sticky

 

When comes out of oven use toothpick to prick holes in top, then add a tablespoon of brandy, then glaze top with apricot jam

 

Allow to cool completely add white melted chocolate, 1/4 slices of red and green glazed cherries, and cut mint leaves in half and place on top :-)
