Some of the many additions to the base ingredients include: green peppers, garlic sausage, agaricus, or diced ham. A peculiar variant is tortilla paisana that in addition to the potatoes and egg includes garlic sausage, red pepper, and peas. Another variant is the potato tortilla without egg (appropriate for vegans), that uses a mixture of water and flour to bind potatoes instead of egg. Wild potatoes is a version of this served in Madrid that is topped with salsa brava, or wild sauce (a mildly spicy sauce, often flavored with paprika).
