The velvet foot mushroom is fond of cold weather and usually appears in late fall here in the Driftless Region. In fact, it is also called the winter mushroom. Notice the sticky orange caps that are one of the keys to its identity. People cultivate this mushroom and you can buy it in stores under the name Enoki. Besides a pleasing mild sweet flavor, this mushroom is medicinal and might help to keep us cancer-free.
