One of the last but certainly not least of the edible mushrooms to emerge in Winneshiek County, these bulbous honey mushrooms are prolific fruiters on the forest floor. I picked two tote bags full and there must have been a million more. They're terrific in a tossed salad after being sautéed. Note the honey-colored caps and the swollen (bulbous) stem base. They have a white spore print. Interestingly, bulbous honey mushrooms are one of the oldest organisms on earth, and a similar colony in Michigan is estimated to be 1500 years old.
