Vegetable Soup

Vegetable Soup

2 quarts water

1 onion chopped

2 cloves garlic, minced

2 potatoes, peeled and diced

3 carrots, sliced

2 zucchini, sliced

2 celery stalks, sliced

½ C. cilantro, chopped

1 green pepper, chopped

1 red pepper, chopped

2 tomatoes, chopped

3 oz fresh spinach, torn

2 C. corn, frozen

Salt and pepper to taste

 

Place everything into a large pot. Bring to a boil and then turn down to simmer for 1 hour
