Rosemary skewered monkfish with roasted vegetable couscous.

 

Monkfish marinated in lemon juice, salt, pepper and rosemary. Skewered on fresh rosemary sprigs.

 

Served on a bed of couscous with roasted vegetables (red, green and yellow peppers, onions, fresh rosemary, garlic and tomatoes) with flat leaf parsley.
