Juicing Celery

After our recent celery harvest we have been scratching our heads

trying to think how we can use this crop. The vegetable stock made a

pretty good dent in the celery harvest. We still have a lot more. I

approached the local health food store and they were willing to buy

some of our celery. I'd rather use it ourselves than make $20 on a

crop that took us over a year to grow. This morning I juiced a good

portion of celery with apple, pear, ginger, carrot and strawberries.

That turned out pretty tasty and celery has some nice health benefits

from juicing that I was not aware of. It is high in magnesium, iron,

potassium plus some vitamin C and sodium.
