Chaja cake

This Uruguayan sponge cake was created by Orlando Castellano, who named it after a South American bird. The meringue pieces encrusted on the side supposedly looks like the feathers patterns of the chaja. The cake is a sponge flavored with peach syrup, filled with vanilla whipped cream, and decorated with more peaches. I used fresh peaches instead of canned ones. It's sweet, but surprisingly light..
