Haleakala cake

Haleakala means "sunrise." This recipe originates from the Royal Hawaiian Hotel and published in Maida Heatter's book. It's an egg white cake, covered with pineapple, marshmallow icing, and sprinkled with coconut flakes. Not one of my favorite cakes, but it's worth a try.
