Grater cake

This Jamaican cake is made with grated coconut cooked in caramelized sugar. The recipe is from jamaicancookery.com, except I added a pinch of salt and some almond exrtract for flavor.

 

Since I don't have fresh coconut, I soaked dried coconut flakes in water overnight to re-hydrate it. It's probably a hundred times tastier with the fresh stuff. It's like eating a giant mounds bar, without the chocolate.
