M'hencha cake

Other known as the Morrocan snake cake, because of the way it's coiled.

 

I followed Shane Delia's recipe, using a dark-chocolate pistachio filling with saffron. The recipe calls for way too much ginger.

 

It has a nice crispy phyllo crust. I topped it more pistachio, poppy seeds, orange zest, and saffron flower, for a confetti effect.
