Persian Love Cake

I adapted the spice cake from Rose Levy Beranbaum to the Persian flavors of saffron, cardamom, and rose water. The cake is topped with rose water marscapone whipped cream, rose petals, pistachio, and pomegranate malban.

 

My valentine calls it a gulab jamun cake. True, it has the exact flavor combos as India's gulab jamun.
