Tomato Grunt

Marie Nightingale's cookbook has the Nova Scotia recipe for blueberry grunt. I replace the berries with slow-roasted tomato and chicken broth - changing this famed Canadian dessert into a savory breakfast.

 

The grunt is served with fresh mozarella and blueberry slaw on the side.
