The Nom Wah Tea Parlor is a Dim Sum institution in New York's Chinatown since the 1920's. The name itself, "Nom" meaning Southern, and "Wah" meaning "Of China," denotes the distinct regional cuisine found within. Southern Chinese, especially Cantonese style cooking is becoming a rarity these days, surprisingly even in New York. This is because more and more northern or centrally born Chinese have come to New York and local restaurants now cater to their regional tastes. As Chinese eateries thus become northernized, restaurants like Nom Wah (...and Big Wong's on Mott Street, another long time favorite) are a classic but dying breed.
