Your farmer

 

Hacienda Sonora is a family-owned farm that has been in operation for generations.

Our main focus is to produce the highest quality gourmet coffee, while maintaining perfect harmony with nature and increasing the community’s welfare.

 

Sonora Coffee is, simply, the coffee grown at Hacienda Sonora. In other words, we are the farmer selling the product directly to you, the customer. This enables the revenue of our product to stay within the community and the people.

 

Our farm

 

Hacienda Sonora is located in the West Central Valley of Costa Rica, in the foot of the world renown, Poas Volcano. The farm’s area is composed of 90 hectares of coffee and forest, at an average altitude of 3900 ft above sea level. Our coffee grows in an environment surrounded by exotic trees and other vegetation, providing the perfect shade for the crops as well as improving the chemistry of the naturally nutrient rich volcanic soil. Thanks to the farm’s diverse ecosystem, many different species of birds and animals seek refuge in our land.

 

Green energy generation

 

All of the energy consumed by the farm is 100% renewable energy harvested on the farm. This energy supplies power to the coffee mill and provides free electricity for all the people who live and work at the farm.

 

The green energy generation is from a hydro-electric power source. The electricity is produced from the momentum of water, a water turbine and a generator. Our high efficiency water turbine is known as a Pelton Wheel. The water stream hits the wheel’s paddles, forcing them to rotate. The wheel is connected to a generator that converts the mechanical energy of the rotation of the wheel into electrical power.

 

The process requires only a little amount of water, which is provided by a man-made storm stream. Since the rain forest is located at higher altitude, the stream is able to flow regularly year-round. Before the water is burrowed from the stream it gets screened so that no organism goes through its turbulent path. After using the water we put it back into the original stream were it continues its path, without being affected.

 

Micro-lots

 

The only way to provide the highest quality coffee and the most unique taste is to put every section of our farm under an individual microscope. Every micro-lot needs a different recipe in order to obtain the best characteristics. That’s one of the reasons why at Sonora we use four different types of Arabica trees: Bourbon, Catuai

Yellow, and Catuai Red. By performing frequent soil tests on each of our micro-

lots we determine the right amounts and types of organic and natural fertilizers to

apply.

 

Thanks to over 50 years of experience with coffee and our land, we have been able

to determine how to obtain the best product out of each micro-lot.

 

Our Process

 

The machines in the coffee mill are sized to process only the farms coffee. Due to our small amount of production, our coffee mill is considered a micro-mill or as we call it in Costa Rica, a “micro- beneficio”. All of our machines are tuned to perform in the best and most efficient manner, using only energy harvested within the farm.

 

Picking and processing only the red cherries are a crucial part of our high quality standards. In the past years we have produced delicious results from processing our coffee as honey coffee. In the Honey process, coffee is dried with their mucilage fully attached.

 

Honey coffees usually posses distinct sweetness, enhanced fruit notes and sweet acidity which provides a unique cup profile. Besides the benefit of producing a delicious cup, the honey method saves huge amounts of water. This is because no water is required for pulping, washing or fermenting. Using the honey method saves more than 3 gallons of water per pound of coffee.

 

Our people

 

Hacienda Sonora provides every worker with the opportunity to have free accommodation in one of the farm’s houses, where energy and potable water are included. We believe in providing our workers with competitive wages. We provide additional help for the families that require it, enabling them to put their children through school.
