American Flatbread began in the summer of 1985 as a dream and a leap of faith. Nestled in the heart of the beatifically bucolic Mad River Valley of Vermont, George Schenk set about perfecting a union of fire and rock and fresh sustainably produced ingredients. The results were a bread that was light and flavorful, a bread that was truly delicious and genuinely nutritious. The bread was good for kids to grow up on, great for busy parents and singles and older people who sometimes eat alone or don't have time to spend in the kitchen. The bread helped family and friends, and became an ingredient in a growing community of people that want good, wholesome, nutritious, food made with integrity and respect.
Soon, as all good "local" secrets are prone to, American Flatbread attracted acclaim from outside the valley and followers from Maine to Florida and New York to Chicago sang the praises of these wonderful breads. Awards were given, chapters written, and the regional and national press came out to visit the little bakery. Stores called about carrying the pizzas, more breads were baked, additional restaurants opened, and eventually, a headstrong self-taught organic-baker walked into the Mad River Valley barn-turned-bakery and said that he wanted to share this wonderful bread with friends and others "out west."
It was difficult to convince the bakers in Vermont that someone from 3000 miles away could match the dedication required to produce such wonderful breads. Because they cared so greatly about this bread that was made by hand and believed so much in their work as well as the sanctity of food, the artisans agreed that sharing American Flatbread made them the happiest.
This pizza is the direct result of a great desire to feed, nourish, and share the good will, pride, and integrity of the people that make baking these breads possible. As artisan bakers who have a deep respect for the work hands do, we celebrate the same ideals that were realized in George's original Vermont stone oven. Mostly, we are proud to be able to share this regionally produced bread with people.
From our New England roots to our California bakery, at American Flatbread we have chosen to truly reflect our regional environment and bake our breads with this respect. At all our locations, our ingredients come to us locally and from outstanding stewards of the land who promote sustainability. Our bakers, the sourcing of our ingredients, our water supply, and even our wood-source, differ from those in our original Vermont location. Still much is in common: the wood-fired clay and stone oven, use of uncompromised all-natural ingredients, and most importantly, each bread is hand-made by people who genuinely care.
