For 122 Pictures in 2022 #102 "Summer eating". Nothing says summer like cooking something on the grill. These are beef ribs, almost as big as those in the Flintstones. For some reason, the butcher cut these into shorter segments, as though he was going to cut short ribs and then changed his mind. But they were more manageable than a full sized rack, so it worked out well. This was my first grilling session of the summer, delayed to to abysmal weather (either rain or extremely high winds). But the weather was perfect today - sunny and 89F/32C with low winds. The previous image shows them cooking on the grill.

Usually these fly away. Even when I have encountered them at night they seem be quick to fly off.

This is the second time I have had one stay put for me. I feel it may be the instability in yesterdays and todays weather (Thunderstorms).

It certainly was not the temp as it was anything but a cool morning.

It does look like it had a ruff evening ( I can relate )

I am grateful it was ground level and laying there making images it allowed me to move its stick around to suit background and composition. It was that well beeehaved.

A dish of flavorful Beef Enchiladas by Chilis in Sentosa.

"Beef, it's what's for dinner" was a slogan used by the National Livestock and Meat Board starting in 1992 to promote the consumption of beef. Apparently, this ad campaign has continued to the present with various spokespeople and advertisements. According to Wikipedia the slogan is recognized by 88% of Americans I won't speculate as to where the other 12% have been hiding, although to be honest I haven't seen any of their ads in recent years. For 121 Pictures in 2021 #89 "Slogans", this is a triptip roast I smoked to medium rare.

 

The technique used is to get the smoker to 200 - 250F and smoke until internal temp is around 115 - 120F. This cut does not need to stay in the smoker for many hours like a brisket. I also apply a rub of salt and garlic powder for around 6 hours before starting the cooking. Cooking time is approximately 1 hour, depending on weight and temp.

For 122 pictures in 2022 #48 "Ingredients for...", these are the ingredients for making beef jerky. The beef is an eye of round roast sliced 1/8 inch thick. Behind that are garlic powder, liquid smoke, worcestershire sauce, cumin (which I decided not to use), sea salt (I used kosher), brown sugar, ground thai red chile (home grown that I ground up), onion powder, and curing salt #1 (which I believe is just sodium nitrite). Mix all that up and marinate for 18 - 24 hours, then dehydrate.
