1/4 cup balsamic vinegar
1 tsp. Dijon mustard
12ish slices bacon , halved crosswise
1 pound skinless halibut fillets or steak, cut into 1" cubes
1/2 tsp. freshly ground black pepper
Lemon juice
Peanut oil
toothpicks
In a pot, reduce vinegar down to sauce texture, about 2 tblsp. Add mustard, whisk. Put off to side.
Wrap Halibut cubes in bacon, and throw a toothpick through to hold them together.
Throw the pepper on it
Cover baking pan in thin layer of peanut oil, and warm in a 450* oven.
When oil is warm, take out and quickly layer cubes onto pan with open fish facing up.
Bake for 7-8 minutes.
Flip, and bake another 5 mins, or until bacon is golden.
"Decorate" a plate with the reduced vinegar (fancy patterns and whatnot)
Place fish bits on plate.
Cram it in your face hole.
