11/365: dinner and dessert

we also had green beans but i didn't bother to take a photo since they looked kind of sad and stubby (they were frozen, shh.)

 

this is a recipe i took from giada de laurentiis. i think it was this recipe i got the inspiration from. she uses brown butter and ravioli. mine is a little different. i sautee baby bella mushrooms in a little olive oil, s+p, minced garlic and a few generous cracks from an italian herb grinder. i sprinkle parmesan cheese somewhere along the way. once the mushrooms are about halfway cooked through, i add a generous splash or two (or three or four) of balsamic vinegar and let that cook down (or pour as much as you want without regret because i cannot get enough balsamic vinegar, it's my favorite.)

 

meanwhile, make your pasta. any pasta will do. this is tri-color pasta with spinach and tomato noodles. add alfredo sauce to your mushrooms and heat that through, add the pasta when boiled to your liking. cook another minute or so in the mushroom sauce and serve immediately.

 

the green beans went along quite nicely with this dish but they were just sad looking.

 

dessert was a pomegranate, my favorite.

 

 

 

today was my brother's 23rd birthday. he made the dean's list at school and was formally accepted to Holy Cross Greek Orthodox School of Theology. he'll start in the fall. so proud of him!
