Herb Crusted Rack of Lamb
Thyme, mint, parsley, oregano and parmesan in the crust. I cooked this for my beloved who is being subjected to the vagaries of hospital food, packing it into flasks so that it would be warm on arrival. Such is love and devotion :) Charlotte potatoes, if anyone is interested - just sweet enough to balance the lamb, which went from raw to plate in about 25 minutes (including a little resting time).
