Today I made soup

 

Winter certainly seems to be here, so it must be soup time. This soup was inspired by one I really liked in China. Only inspired by, because I could not hope to copy it. But it still turned out really good.

 

I went to the shops planning to buy a whole chicken to make my soup broth. But I found turkey drumsticks - which was a real treat! It's hard to find turkey here in Australia. So that's what I used for the broth. (First I roasted them along with potatoes, carrots and onions - I even made gravy. Another wonderful winter meal.)

 

While the turkey was cooking, I cut up the veggies. This took a really, really long time - but time passed quickly as I've been listening to Jane Eyre on audiobook. I cut up carrots, white radish, onion, potatoes, shitake mushrooms, oyster mushrooms, beetroot tops, and green onions.

 

Then I made the broth. I used the turkey drumsticks and added ginger and goji berries.

 

I took out the drumsticks to use for a later meal. (Can you use them again for a new broth?) I added the veggies and let them cook. As you can see - I had enough for one large and one small pot. Finally, to the small pot, I wanted to try adding egg. I wasn't sure how easy it would be, and didn't want to ruin the whole thing if it didn't work. Well - it worked really well. The soup turned out very yummy. (Though still not nearly as good as the one I had in China.)
